Are you a full grown adult? You will certainly grow ifyoure stillyoung.. 20.5 toptube/8 inch bars was my setup when i was 60 inches tall.
Then 21/8.5 ; 20.85 /8.85 and Now im 73 inches tall with 21.25 tt and 9.85 bars.. Always ran one spacer and topload stem.. Its all about personal preference. Do research that is science based! Tall bars are proven to help back support and fat tires do absorb more shock impact. You will learn a lot about yourself and your bike in your days ahead. I have learned the best bike is he one i actually ride.. Cheers!

Edit++ 60 inches is 152cm

Try adjusting bar position, tire pressure and even seat height may change our riding.. Experiment is the best way. Also, parts wont make tricks magically happen, that comes from time in the saddle.. Check ethan corriere on the fit prospect complete.

To answer your question, you would need a new bike if you went with 18".. Stick with your curwnt setuo and ride it til it breaks.. Our natural human capabilities of adaptation will happen no matter what.

Try some smaller bars? Iirc you bought those after everyone saying they'd be too big. And now your considering going down a wheel size because your bikes too big?
