I know it affects how hard the gearing feels, but is it longer = harder or shorter = harder?

shorter is harder.

Longer would be easier, as you have more leverage to to push with,
Say if you put 10 kg at a lever a meter long, then put it on a lever 2 meters long, it would be able to lift more on the 2 meter long lever.

180 mm just seems like it'd be annoying to catch some tricks with.

I've run everything from 170 to 185 and I can tell you that every person has a "magic" number where things work best for them. Mine is 175. A lot of it too has to do with height of a person. If you are taller, going longer feels better usually, as your feet aren't rotating quite as fast.

175 is perfect not to small and not to big!

no, you would be able to lift it easier, not higher. longer levers take up the work. it simple machines.
