I ride mainly street and park and run a 75.5 headtube currently my forks have 26mm but I was thinking of moving up to like 28 or 30 would it make a big difference in my riding?

It will make your handling more stable, good for speed and transition riding.
A few millimeters matters.

I have a 75° ht I was riding a 22mm fork lately (similar to your 75.5°/ 26mm combo) it's easier to nose and spins fast, it's funny and okay for street riding, but riding a bowl with a setup like this can be scary so I keep my 28mm fork under hand for this kind of riding.

Ya riding any kind of ramps with a steep headtubes and steep offset forks is kinda scary but im sure If you are really good, the extra control you have over the bike could be a good thing.

I dont go big and dont plan to but in my opinion, different offsets and headtube angles change the ride a LOT!

It's funny, I had a fairly average sized frame and forks and swapped them out for frame and forks that were quite a bit shorter and I actually felt more comfortable riding ramps afterwards haha
