I want to buy a new integrated headset but I don't know what I should use to grease it. Can I use mechanical bike milk? Vaseline? Could I go dry and not bother greasing?

go to a bike shop and pick up some phils wood grease

Yeah, sealed bearings are made for a reason unless your bearings have gotten stuck to the races or whatever before.
