i hate the brake cable color and the POS brake lever came stripped with bike

could i use an odyssey U brake monolever and cable on these sorry ass tektro v brake set up?

Unless it's maybe a Tektro "mini" (?) I believe you can't use a U-brake lever as v-brakes (linear-pull cantilevers) use a different mechanism. Something about how far it pulls the cable.
I'd ask the LBS or look at info from Tektro
