well, in my world, i only like to spend a large chunk of money once, so I would go with the bike with these specs:

All of the skeletal structure that is going to bare weight should be full chromoly:
full frame -> front triangle(TT, DT, ST) AND seat stay and chainstay
fork: both the steering tube and the legs
the handle bars
the crank arms and pedal axels

Wheels should be double walled for sure
Sealed bearings in the hubs and bottom bracket

For me, these are the MOST important things to look for to give you the best return on your investment. Every thing after this is “eye candy” to me at least.

Along with structure, geometry is the next most important thing.

If you get a bike where the skeletal parts are top notch, you will only have to spend money as the typically worn parts break...like tires, chains etc. Personally, I don't make a ton of money, so when i buy a bike, i expect the frame, forks and wheels to last forever.

Look at the Colony Endeavor. it seems to be a hella good bike for the money...probably one of the best values I have seen in the recent years. don't know what it would be in AUD, but it runs around $549 USD...

I also like the WeThePeople Trust, and am now saving up for a Verde Luxe

There's not much about for the lower end of your budget, but there's quite a wide choice for the top end. Have a look around and see what takes your fancy.
Most bikes in the same price range are much the same, so if one has some awesome parts it'll lack somewhere else
